8 ounces of tagliatelle pasta
1 shallot chopped small
2 garlic cloves chopped fine
1 pint of cherry tomatoes
6 ounces pine nuts
small bunch of fresh parsley chopped fine
about 1 tablespoon olive oil
1/2 cup cooked pasta water
Boil pasta in well salted water. Meanwhile sauté shallot, garlic cloves, halved cherry tomatoes. Dry roast pine nuts in a separate pan. When pasta is done, reserve 1/2 cup pasta water and drain well. Toss pasta with sautéed ingredients, then pine nuts, some olive oil, and lastly fresh chopped parsley. Those home grown tomatoes get real sweet after pan roasting.
