2 pints cherry tomatoes
1 shallot
6 garlic cloves minced
4 chicken thighs cut into 8 strips (kind of like chicken tenders)
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon aji amarillo dried powder or red pepper flakes to level you prefer
salt and pepper to taste
1 small can of tomato sauce (puree)
I added leftover olive relish and cooked okra, total about a cup
This recipe is made strictly on the stove top. It's part of my ongoing search for a variety of recipes where I can use up the sporadic ripening of the cherry tomatoes I had growing. First slice in half and then in thin slices one shallot. Add 6 minced garlic. Add leftover olive relish and cooked okra. Add spices and herbs. Slice cherry tomatoes in half except I left small ones whole (sweet 100's). Add tomatoes to mixture. Let mixture till tomatoes have incorporated into sauce. Add chicken pieces, cover and simmer till chicken is 165 F internal temperature. Serve over rice or flat noodles. This was extra tasty and there will be leftovers.
