Tomatillo Salsa Verde Chicken Thighs
4 boneless skinless chicken thighs, each thigh cut in half
1 batch of tomatillo salsa verde (here is my recipe link)
1 cup cherry tomatoes
1 cup shishito peppers chopped
1 onion chopped
salt and pepper to taste
Saute chopped onion, 1 cup cherry tomatoes, 1 cup chopped up shishito peppers when cooked down add tomatillo salsa verde. When sauce is melded add thighs submerged in sauce and cook till internal temperature is 165F. I had previously made the salsa which was thawed from frozen. I served the chicken over rice. It was delicious.
