2 red onions, thinly sliced
1 cup lime juice
1/4 teaspoon salt
3 tablespoons sugar
1 bay leaf
5 allspice berries
5 whole cloves
1/4 teaspoon red pepper flakes
Slice onions and set aside. Put remaining ingredients in non reactive pan and bring to boil. Add onions an simmer for one minute. When cool pour ingredients in non reactive jar and refrigerate over night.
Serve on tacos or just about any dish that needs a pop of zing.
