Salmon Soup from Salmon Bones

 

Sauté salmon head, collar, spine, and tail in oil till browned.  Add one inch ginger slices 4 garlic cloves sliced, 2 tablespoons miso, 1/4 cup lime juice,  4 tomatoes, 2 tomatillos, 1/2 teaspoon chili powder, red pepper flacks, white, and black pepper to taste. Add one quart of spring water, Cover and boil for 30 minutes. Turn down heat to simmer. When salmon parts are cooked through, remove to cool. Remove bones from salmon parts and add salmon meat back into soup. Add 1/2 cup parsley and 1/4 cup fresh dill. Serve warm with a crusty bread.
