Sorghum Soy Glazed Cod Fillets

4 cod fillets
1 tablespoon olive oil for searing cod
3 tablespoons sorghum syrup
2 tablespoons soy sauce or aminos (low sodium)
2 tablespoon rice vinegar
1 tablespoon sesame oil
2 garlic cloves
1/2 inch fresh ginger peeled and minced
salt and pepper to taste
1/2 teaspoon chili flakes (optional)
1 tablespoon toasted sesame seeds
sliced green onions for garnish (optional)

Sear cod fillets in olive oil and set aside. Make glaze in same pan with the remaining ingredients (except sesame seeds). When glaze has thickened add cod back into pan and cook till flakey. Do not overcook cod. Garnish with sesame seeds and chopped green onions. Quite tasty. Serve immediately with a side of rice, pasta, etc.
