1 Cornish game hen, thawed and then bring to room temperature
1 onion diced small
8 mushrooms diced small
1 tablespoon olive oil and a pat of butter
3 inch piece of ginger, peeled and chopped fine
8 mandarin oranges cut in eights
1 cup wild rice
Rub:
1 tablespoon paprika
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon ground ginger
1 teaspoon dry mustard
1 teaspoon herbs de Provence
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil
1 tablespoon spicy mustard
Sauté onion and mushrooms and set aside. Mix all ingredients for the rub. Use the rub to coat inside and outside of hen. Place oranges and ginger pieces inside hen. Extra oranges can be squeezed over hen. Cook wild rice for 40 minutes and add in onions and mushrooms after rice is cooked. Bake hen at 350 F for approximately one hour. Let hen rest for 20 minutes, then serve along with the rice and vegetable of your choice.
