
Pickled Watermelon Radis Salad
8 ounces arugula
half a cup of sprouts of your choice
8 pickled watermelon radish slices cut in quarters
half of a small cucumber sliced thin
half a cup raspberries
half a cup of peeled orange slices then cut in quarters
small slices of sweet melon of your choice, cantaloupe would be colorful
half a cup of cherry tomatoes, halved
crumbled feta cheese
1/4 quarter cup toasted pine nuts
You might have noticed photos, particularly this photo, for recent recipes are borrowed from the net since I still haven't figured out how to get photos off my camera onto my laptop. I was looking for a colorful salad to show off my pickled watermelon radishes. Assemble salad in layers in the order listed, reserving pine nuts and feta cheese just before dressing the salad before serving. I made a miso and lime dressing drizzled over the top. I also have enough ingredients to make this salad again this week. You can change up this recipe with other ingredients of your choice such as crispy noodles or cooked quinoa or wild rice. Enjoy.
