
Pignoli Cookies
7 ounces of almond paste
1/2 cup confectioners sugar
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1 large egg white
3/4 cup pine nuts
1/2 cup confectioners sugar

3/4 cup pine nuts
Blend all ingredients except pine nuts till smooth. Scoop one tablespoon dough and form ball. Drop each cookie dough ball in the pine nuts to coat all sides. Place each cookie on a parchment lined baking sheet two inches apart. Bake at 350 F about 15 to 18 minutes till edges of cookies are very slightly browned. Allow cookies to cool completely on the pan before moving them to a serving dish. I love pine nuts. So expensive but so rich and delicious.
