Roasted Beets with Goat Cheese Dressing


Roasted Beets with Goat Cheese Dressing

4 smaller beets
aluminum foil
4 ounces softened goat cheese
4 tablespoons water
2 tablespoons white wine vinegar
1 teaspoon agave syrup
a few drops of hot sauce of your choice
salt and pepper to taste

Wrap beets in aluminum foil and roast at 375 F for 45 minutes.
Let beets cool then peel them and cut them into bite sized pieces.
Whisk remaining ingredients and drizzle over beets.
yummy, Gary doesn't like beets but I love them.
