Sunchokes are a root vegetable and a species of sunflower native to Eastern North America. Sometimes they are called Jerusalem artichokes but they are not related to an artichoke. The last day at the farmers market I purchased a couple of tubers to try them out.
knobby tuber. Above left is what it looks like sliced. They have a nutty flavor with a texture and taste much like a potato. They are quick cooking, low in carbohydrates and high in fiber and can also be eaten raw. For our taste test I chopped a shallot and minced a garlic and sauteed the sunchokes in olive oil. Gary said he liked them so I guess I'll get them again if I see them. Thanks for reading and for all your comments.
