What to make for dinner? What about hasselback potatoes? I had cheddar cheese; I had leftover picnic ham; I had potatoes. Folks usually use russet potatoes but I only had red potatoes. I cooked the potatoes till just done. Let them cool slightly. Then I cut slices into them one quarter inch apart just short of all the way through. Place potatoes into a glass baking dish coated with a drizzle of olive oil. Preheat oven to 450 F.
Meanwhile slice thin some cheddar cheese and ham into sizes to fit inside the potato slices. Next in a small saucepan melt two tablespoons of butter, one tablespoon of brown sugar, add one teaspoon of Worcestershire sauce, two tablespoons of Dijon mustard, some onion and garlic powder, salt and pepper. Stir till blended.
In each cut of potato place a slice of cheese alternating with a slice of ham. When filled, drizzle the sauce over the potatoes and place them in the oven and bake for 10 minutes. So quick, easy, and delicious too. Be well.
We love potatoes and have tried something similar to this. But I think I will try your 'sauce'. We like Worcestershire sauce and use it a lot.
