Cucumber Yogurt Soup (cold)

1 English cucumber, peeled and grated
1 cup Greek yogurt
1 lemon, zest and juice or 2 limes zest and juice
1 shallot chopped fine, sautéed then cooled
1 garlic clove minced fine, sautéed then cooled
1 tbs agave syrup
1/8 cup mint leaves chopped
1/8 cup dill leaves chopped
1/8 cup parsley leaves chopped
salt and pepper to taste

Blend all ingredients in blender till smooth. If too thick add half and half, cream, or vegetable or chicken stock to thin. If you don't use parsley the soup will be creamy white with specks of dill and mint. Garnish with a few dill and mint leaves. Serve cold or at room temperature. Another recipe that Gary like which surprised me. Delicious and refreshing especially on a hot day. Enjoy.
