Mutant Peach & Roasted Peaches

 
We purchased some peaches at the farmers market which weren't quite ripe. They weren't as delicious as those we had earlier in the season. The peaches were gritty and bland. I decided to roast the peaches. Above you see a peach I found in the group. Strange things happen in the garden unbeknownst to us all; I think it's a mutant peach.
To roast peaches, slice 12 or so peaches into one inch slices, leaving skins on to keep them more intact. Add 3/4 cup of orange juice, 2 teaspoons each of cardamom, cinnamon, nutmeg, agave nectar, and olive oil. Roast in a non reactive baking dish at 325 F oven for approximately 35 minutes. I'm having these delicious peaches for breakfast today; I also froze two packages. Yes the mutant peach is in there with all the others, waste not, want not.

These are a perfect recipe for peaches in sauce for the fall season or for canning. Enjoy the bounty of summer and please don't waste any ingredients which you might deem unpalatable or unacceptable for any reason. Most food items can be redeemed with proper treatment.   2. I have been roasting, actually nuking in the microwave, an apple at a time, sometimes with a bit of cinnamon, sometimes just naked. It's easier for me to eat with my teeth which can't bite into apples anymore.
