Asian Chicken Noodle Cabbage Salad

 

Salad:

3 skinless boneless chicken thighs baked, then shredded when cool
1 Napa cabbage head shredded/chopped fine into slivers
3 red bell peppers julienned into thin 3 inch slivers
6 green onions chopped fine
6 oz gluten free brown rice spaghetti cooked al dente and cooled
1 tbs black sesame seeds toasted
1/2 cup toasted cashews then chopped medium

Dressing:

4 tbs rice wine vinegar
2 tbs sesame oil
2 tbs olive oil
2 cloves of fresh garlic minced
1 inch peeled and minced fresh ginger
1 tbs hot sauce of your choice
1 tsp salt and pepper
1 tsp agave nectar

Oh so delicious and refreshing on a hot summer day. If making a day or two ahead of time, keep salad and dressing and nuts and seeds in separate bowls stored in the refrigerator and don't add the dressing till right before serving. Enjoy.

  2. That sounds delicious! Everything with fesh ginger sounds good to me, so I definitely have to try this tasty sounding dressing - and the salad as well. Perfect for a hot day, I think.
