Grilled Smoked Mullet


Here's the grilled smoked mullet fresh off the grill.
You could grill any small pan-sized fish this way.
I grilled half a lemon and squeezed it over the fish
just before I served it.


To prepare, make cuts in flesh on both sides
then salt and pepper and stuff with lemon half slices.

Wrap fish with thin sliced bacon, use toothpicks to secure bacon
the bacon keeps the fish moist
and also helps to prevent sticking to the grate.
I sprinkled some mesquite wood chips over the charcoal
Grill over charcoal for about ten minutes per side.
Unwrap bacon strips and set them aside.
With oven mitt grab the head and
pull towards the body cavity, down towards the tail.
most of the bones should come out attached to the spine.
Sure was tasty; we had it with some steamed broccoli.

  1. Many people "knock" mullet, but freshly caught and cooked mullet is great...delicious!
