A week or so ago we had the last of our oysters we ordered.
Melt butter, add freshly grated garlic, oregano, parsley, and pepper.
Set aside to cool and let the butter mixture somewhat re-solidify.
Drop a spoonful of butter mixture on each shucked oyster,
Then top with grated asiago cheese.
This time I put the cheese on before grilling instead of after.
I got better at shucking oysters the more I did.
I used pimento wood to smoke these on the grill.
Remove oysters when mixture is bubbly.
Yummy!
