En Papillote - made in a pouch, this time in parchment paper.
Cooking salmon today but most any protein can be cooked this way.
Start with a bed of sliced onions to raise the salmon up.
Cut the salmon fillet in portion sizes
and place those over the sliced onions.
Salt and pepper the salmon and spinkle with dill and tarragon
I slathered top with mayonaise (I was out of butter).
Pour 1/2 cup of white wine around salmon, top with
lemon slices, drained capers and 1/8 cup of maple syrup.
Bake at 400F for 20 to 30 minutes depending upon fillet size.
I served the salmon with steamed brown rice and broccoli.
You can't go wrong making salmon in a pouch.
We'll have this for a couple of days in a row
easily warmed up the next day.
