Scallops, Snow Peas, and a Turmeric Rice with a Lemon Butter Caper Sauce


If you've been following my recipes,
you know I've been trying to get a good sear on scallops.
Perhaps I'm too timid with a very hot pan?
Maybe I don't dry the scallops enough.
No matter because I love scallops and keep making them.
Here you have Scallops, Snow Peas,, and a Turmeric Rice
with a Lemon Butter Caper Sauce.
I made my brown rice as usual just adding a tsp turmeric.

In a separate pan I sauteed my snow peas with butter and dried mint.
Next I sauteed the scallops in a very hot pan with avocado oil,
then removed scallops. To the same pan I added white wine,
butter and lemon juice and reduced the sauce. 
When sauce was reduced I added the drained capers.
Put your sauce down first and then top it with 
the scallops, rice and snow peas.
The rice takes 30 minutes took and stays warm in the pot.
These types of meals are so easy and quick to make.
Try them and you won't be disappointed.

  1. I love scallops but don’t cook them very often. I am always looking up how to cook them properly as I know they are fast and healthy. This looks like a great meal.
