Baked Whiting & Canned Turnip Greens

Found some whiting fillets in the frozen section, maybe at wally world. Problem is they are all stuck together so had to thaw them some to get two fillets loose to bake. Whiting is a flakey mild Pacific fish which can be substituted for cod or flounder. I preheated my oven to 375 F and drizzled some oil in a baking dish, sprinkle salt, pepper, parsley flakes, the zest and juice of one lemon over the top and then a bit of smoked paprika. Bake in the oven for 15 minutes. Meanwhile heat up your canned turnip greens. Please don't scoff at canned vegetables, turnip greens are delicious and so good for you, they have lots of calcium, potassium and iron. The canned turnip green are packed full in the can and have very little water. I get the greens without seasoning since most of the seasoning isn't good for anyone anyway, full of salt and sugar. When the fish comes out of the oven serve it up along with the canned turnip greens then drizzle the fish pan juice over it all. Talk about a quick meal and so delicious. Enjoy !
