1-1/2 stick of butter
1- 4 oz package of bakers chocolate unsweetened
3 eggs
1 tsp pure vanilla
2 cups sugar
1 cup of 1:1 gluten free flour
1/2 cup chopped pecans or walnuts
few more nuts for sprinkling on the top
One bowl clean up for this recipe. Put butter in microwave safe bowl, top with bakers chocolate. Microwave in spurts on low setting. Don't leave unattended because you don't want chocolate spraying all over your microwave. Keep checking to be sure chocolate is just barely melted. Remove from microwave and stir with a spatula, residual heat should melt the chocolate the rest of the way. Add the eggs and vanilla and stir. Next add the sugar and stir. Last add your gluten free 1:1 flour and chopped nuts and stir. Prepare a 9 x 12 baking dish with parchment paper so you can easily lift brownies out when they are done.
Now preheat your oven to 350 F and let the batter sit till oven is heated. Gluten free flour is best if left to hydrate for a bit, hence waiting till it is made before heating the oven. Pour batter into baking dish; batter will be stiff. Spread it out as best as you can. Sprinkle a few chopped nuts on top. Bake for 30 to 35 minutes, till toothpick comes out just about clean. Remove from oven and let cool completely. Brownies firm up as they cool. Cut into small squares and serve. These are rich and delicious.
