Want to impress your guests? Make bacon wrapped banana bites. This idea popped into my head because Gary bought some bananas. The next day I remembered him saying he was out of bananas so I bought some bananas. How to use up a multitude of bananas other than the usual banana bread. I thought of bacon wrapped banana bites. I read they've been made before but honestly the idea came to me independently. I decided to make them with my own spin on it.
3 green bananas (even the green ones were ripe inside)
4 slices of thick cut bacon cut in half
toothpicks for securing the bacon
Sauce:
4 tbs BBQ sauce of your choice
2 tbs maple syrup or orange sauce
agave syrup to tame the vinegary sauce
Peel the bananas and cut into three or four pieces of equal lengths. Cut each slice of bacon in half and wrap each banana piece with the bacon securing the two ends of bacon together with a toothpick. Place banana bites on a foil lined baking tray. Drizzle or brush sauce over the banana bites. (Next time I'll coat the bananas and bacon separately and probably use thin sliced bacon). Bake or grill at 375 F for about 40 minutes for thick sliced bacon.
Cool slightly before serving. You'll have left over sauce which you can spoon over the banana bites just before serving. You could probably serve this with a scoop of vanilla bean ice cream. Next time I'll skip this BBQ sauce and make a salted rum caramel sauce. Yes, they are worth making again. Enjoy !
