12 small beets or 8 medium
1/4 cup olive oil
1 tsp dried or fresh thyme
salt and pepper to taste
juice from one orange or 1/2 cup orange juice
1 tbs flavorful vinegar, like raspberry or champagne
Remove ends from beets, peel, then cut into 1-1/2 inch pieces. (Use gloves if you don't want red fingers.) Place in 13 x 9 inch baking dish and toss with olive oil, then add thyme, salt, and pepper and toss again. Bake in 400 F oven for 45 to 50 minutes till tender when fork is inserted. When beets are cooked, remove from oven and toss with orange juice and vinegar and serve warm. Smaller beets will cook more quickly than larger beets. I had a combination of sizes, three large and 6 small beets.
