1 onion chopped
1 small pepper chopped
2 large tomatoes chopped
4 cups white half runner beans, strings removed and chopped
3 cups water
1 tsp black pepper
1 tsp oregano
1 tsp salt (added at end of cooking time)
White half runner beans have the best flavor of any green bean but they do take some time to remove the strings. I use my thumb nail to pinch the end and then pull that to do one side and the same with the other end. It doesn't take that long at all and goes faster if you have a companion who helps. Sauté onions then pepper, then tomatoes, then green beans and water. Cook for about one hour till moisture mostly evaporates and beans are tender. Enjoy !
