Gluten Free Bread Biscuits

2 cups 1:1 gluten free flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp fine sea salt
1 tsp dried oregano
1/2 tsp ground dried rosemary
1 cup Greek whole milk yogurt
4 tbs olive oil

This time instead of making bread sticks I decided to shape the dough into biscuit shapes. Preheat oven to 425 F. Mix dry ingredients together. Use cold yogurt straight from the fridge and cut into the dry ingredients using a tablespoon. When crumbly add the olive oil, one tablespoon at a time till dough starts to come together. Again use a tablespoon to mix all ingredients.

Sprinkle some flour onto your working surface and flatten dough to 1/2 inch thick. Using a cookie cutter cut biscuit shapes and place on a parchment lined cookie sheet. Brush tops of each biscuit with a scant amount of water and sprinkle each biscuit with seeds of your choice. I used anise, caraway, fennel, poppy, black sesame, and white sesame seeds. Bake for 15 minutes and watch closely, mine were brown in 12 minutes this time. Remove from oven and place on cooling rack immediately. Enjoy !
