Baked Zucchini Rounds

1 medium zucchini sliced crosswise to 1/4 inch slices
neutral oil to brush on top side, about 1 tablespoon
salt, pepper and dried oregano to sprinkle on one side
some kind of easily melted cheese

Look someone already had a few slices right off the tray. Imagine that! Slice zucchini into 1/4 inch rounds and put on a parchment lined sheet pan. Brush sliced zucchini with oil on both sides, then sprinkle with salt, pepper, and dried oregano. Bake in 425 F oven for 10 to 15 minutes. Just after removing zucchini rounds from oven, sprinkle with grated parmesan or asiago cheese and serve immediately. Nice treat!
