Mixed Greens & Caramelized Onion Frittata

1 yellow onion sliced very thin, cut slices in half and separate
1/2 tablespoon oil to sauté onions
1/2 container of mixed greens (whole container contains 5 ounces)
2 tablespoons butter to wilt greens
8 eggs beaten
1/3 cup heavy cream
1 teaspoon dried parsley
salt and pepper to taste
1 cup grated gruyere cheese

In a large 9 inch cast iron frying pan, caramelize onions in oil on low heat; this will take some time (about 30 to 40 minutes). Photo above show the onions are not caramelized yet. Beat eggs then add cream, parsley, and salt and pepper.

When onions are caramelized add mixed greens along with two tablespoons of butter and cook till wilted. Pour in egg mixture and stir around to distribute onions and greens. Top with grated cheese and cover pan and cook on low heat till mixture doesn't jiggle in middle, about 5 to 8 minutes.
Don't overcook eggs because a cast iron pan retains heat which keeps cooking frittata. Uncover and remove to a rack and let cool slightly. Serve alone or with an accompaniment of your choosing. This makes a hearty meal for any time of day. Oh my, the caramelized onions really make this dish. Enjoy !
