Fried Wild Caught Catfish - Um Um Good

Pat catfish fillets dry, dip in flour, let um sit a while.
Next dip um in a beaten egg, then dip um in finely ground cornmeal.
Let um sit a while longer, about 5 minutes or so.
Then fry um in some hot oil, make sure it's hot, flipping um once.
Don't overcook the fish, you want um flakey.
Served here with some wild rice which is a bit incongruous. 
Homemade tartar sauce would have been good
but I was out of mayonnaise.
That didn't change the fact the catfish was um um good.
