First of the Season - Lady Peas

When 7M Farms posted they'd have fresh shelled lady peas on Wednesday, I made plans to get there at opening to get some. I got a bag for us and one for my nephew and niece. They've never had lady peas; they are in for a treat. I've posted about lady peas many times before and you can do a search on the right hand side of my blog to see the various times I've cooked them. I make the lady peas different every time. Why not, variety is the spice of life. My niece might not be able to use them right away so I discovered they can be blanched and cooked later. Get you some lady peas, they are the most creamy, soft, sweet, field peas you can eat.

I rendered one half pound of bacon, then added one chopped yellow onion, 2 minced cloves of garlic, then 4 large roma tomatoes chopped, 3 cups of water, one pound of lady peas, one teaspoon of dried thyme, one teaspoon herbs de provence, one bunch of parsley chopped, salt and pepper to taste. It takes about one hour to cook on top of the stove. Gary raved about the peas, they were that good.
