Carrot Soup


Carrol Soup

At first it seems simple and perhaps a bit boring. Think again.
In some olive oil, sauté some chopped onion, celery, and carrots.
Add minced garlic, ginger, some cumin and a dash of vinegar and sugar.
Add salt and pepper to taste and perhaps some turmeric for coloring.
 Cook slowly for one day. When cool refrigerate overnight.

Next day blend, then cook a bit more. Adjust seasoning.
Now you have a very tasty meal.
A good way to use up items in your crisper which might go to waste.
Serve with some crusty bread. Gary raved about the soup.
