White Bean Salad
2 cans white beans (drained)
1/4 red onion (chopped fine)
2 tbs red wine vinegar
1 red or yellow bell pepper chopped medium fine
1 teaspoon herbs de provence
1 tbs olive oil
salt and freshly ground pepper to taste
Drain the cans of white beans well and place in a bowl. Chop the onion and soak in the wine vinegar in a separate bowl. Chop the bell pepper and add to beans. Add the herbs de provence, olive oil and salt and pepper. Last add the onions and vinegar to the beans. toss well and serve. Quite satisfying and so quick to make. If you don't have herbs de provence you can substitute all or one of rosemary, tarragon and thyme.
Now blogger is automatically double spacing. For now to change to single space you must use 'shift + enter'. Pain in the petute.

I'm still going back to original blogger. I hate the new one! All the editing tools are hidden. As long as I can, I'm back here...and trying to post more things to publish down the line, in case it stays on new format...where I'll obviously publish much less. I just had a white bean and green bean salad, tasted delicious...but I haven't made it yet.

Delicious looking salad. I like white beans, use them on my green salads as garnish. They are high in protein.
