Then I ordered a child proof cover for my disposal switch but I ordered the wrong item. Seller offered to send the correct one for free without returning the other one but they don't carry what I need. So I decided to give it away since the seller was so generous. We can use all the paying it forward in today's world. I posted the item in my local group on fb so hopefully some family can use it. Now me, I was getting the cover for my cat to keep him from turning on the disposal. Ha. There is definitely a reason we named him 'Bonkers'. He looks so innocent in the photo, but he has a warp speed.
2 red onions
2 tbs butter
1 tbs olive oil
1/4 cup balsamic vinegar
3 tbs red wine vinegar
1 cup brown sugar
1 lemon juice and zest
20 large roma tomatoes
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp ground coriander
1/2 tsp ground cumin
1 tsp toasted then ground fennel seeds
few dashes of cayenne
Peel onions and cut in half stem side to top side. Place flat cut side down and slice lengthwise in thin strips. Cut all those strips in half. Next separate all the cut half strips. This takes patience but is worth it in the end. Melt butter and add olive oil to a non reactive stock pot along with onions and cook over medium low heat till caramelized. Stir onions occasionally to be sure they don't burn. This will take some time, about 45 minutes. Onions should be browning towards the end. When onions are starting to brown and brown bits are building up on the bottom of the pot, add the vinegars stirring the bottom to deglaze the bits stuck to bottom of pot. Next add the sugar and lemon juice and zest. Cut stem out of roma tomatoes, cut in half and cut halves in thirds. Add these to the pot along with spices. Cook over medium heat till tomatoes break down and mixture becomes thick and an even color.

Hi Sue, thanks, I even contacted Microsoft and they couldn't advise how to fix it. Apparently the driver works but my computer doesn't recognize the memory stick. Maybe I can get an updated one.

ReplyDeleteI think there is a spook hanging around here at the moment. I can't find two pairs of my slacks, nor can I find my digital camera!! I've search...and this is only a small place in which I dwell...so the spook is to blame!! :)
