Mango Salsa is a beautiful dip to serve. Folks are instantly drawn to the colorful salsa ingredients. Not only that but the salsa is full of healthful ingredients.
1 large shallot chopped fine
1 tbs vinegar
1 large red bell pepper chopped fine
2 mangos peeled and chopped
2 jalapenos seeded and chopped fine
2 limes juiced
3/4 cup chopped cilantro
1 tsp dried coriander
1 tsp dried cumin
salt and pepper to taste
several dashes of sweet habenaro sauce if japapenos are too mild
1 tsp or more of honey drizzled
Chop shallot fine, place in a bowl and add vinegar, toss and let vinegar temper the raw shallots for half an hour. In the meantime chop the bell pepper, mangos, and the jalapenos. After half an hour add remaining ingredients to the shallots and toss gently to combine. Taste and adjust seasoning and habenaro sauce and honey. Let salsa sit at least half an hour or overnight for ingredients to meld. Serve with your favorite chips. I am using GF blue corn tortilla chips, my go to, because they're mild and not overly crispy.
I adore mango, but like it best raw and unadorned.
